Tomato Jams Two Ways: Recipe from the Pembroke Farmers Market

As we head into the colder months, the key to continuing to eat local produce is to take advantage of various methods of preservation.


Those summer tomatoes can be popped in a bag and stored in your freezer until you are ready to turn them into soup, sauce, or this versatile tomato jam, featuring your choice of Island Girl seasoning or Voodoo Vixen seasoning from BFF Kitchen, along with tomatoes from Cushing Farm.


Both are sure to please your taste buds, whether you choose the zingy punch of ginger from Island Girl or the spicy jerk flavor profile of Voodoo Vixen. Alternatively, you could simply create both, eliminating the need for a decision!


Ingredients (this recipe makes about 2 cups of jam):

  • 2 lbs ripe tomatoes (any variety) with centers removed, and chopped in large pieces

  • 3/4 cup brown sugar

  • 2 Tbsp apple cider vinegar

  • 1 Tbsp Island Girl dry rub seasoning OR Voodoo Vixen dry rub seasoning from BFF Kitchen

  • 1 tsp salt


Instructions:

  • Add all the ingredients to a large saucepan and bring to a boil, stirring frequently to avoid burning.

  • Reduce to low and simmer and continue to stir occasionally until the consistency is jam-like.

  • Remove from the heat and let cool completely before transferring to an air-tight container and storing in your refrigerator.


Use this jam to dress up burgers, spread on toast with eggs, or serve it as part of a charcuterie board with some cheese from The Farmhouse Meats and Cheese!
