Peaches are delicious, but if you haven’t tried them grilled yet, then you’re missing out! The heat brings out their natural sweetness, which pairs beautifully with the creamy tang of goat cheese and the slight bitterness of leafy greens.


Toss this all in a simple balsamic vinaigrette, and you’ve got an easy summer meal that satisfies all your tastebuds! You can find peaches at Oakdale Farm and goat cheese at The Farmhouse Meat and Cheese Co. and Dias and Daughters this Saturday from

10am-1pm at the Pembroke Community Center.


And since you’ll have the grill on anyway, don’t forget to get your meat too from The Farmhouse Meat and Cheese Co. and Dias and Daughters!


Ingredients:

  • 2 peaches, thickly sliced

  • Olive oil for brushing the peaches

  • 1 head lettuce, chopped (you can also use spinach, arugula, or other leafy green of choice)

  • 1/4 red onion, thinly sliced

  • Approximately 1/2 cup goat cheese, crumbled

  • For the dressing:

    • 1/2 cup balsamic vinegar

    • 1/2 cup extra virgin olive oil

    • 1 clove of garlic, minced

    • Salt and pepper to taste


Instructions:

  • Heat a grill to medium heat.

  • Meanwhile, brush the peach slices with olive oil and set aside.

  • Make the dressing by combining all the ingredients (balsamic vinegar, olive oil garlic, salt and pepper) in a small bowl and whisking until well blended. Set aside.

  • Grill the peaches for a minute or so on each side just until a char is formed, then remove and set on a plate.

  • Place the lettuce in a large bowl, and top with the onion slices, goat cheese, and dressing.

  • Toss to combine, then arrange the sliced peaches around the top of the salad.


Serve while the peaches are still warm, you'll be glad you did - enjoy!
