Buy Local Eggs at the Pembroke Farmers Market to Make this Fresh Frittata for Friends & Family

Farm fresh eggs just taste better -- no one can argue that!

Check out this easy to make Frittata recipe that uses a whole host of vendor goods from our friends here at the Pembroke Farmers Market. And stop by our Market Manager's tent and please let us know how you spiced up your own frittata recipe for friends and family...
Ingredients:
2 cups chopped fresh local vegetables of choice from Oakdale Farms or Overboard Farm (some ideas include onion, broccoli, zucchini, tomatoes, etc. You can also use greens such as beet greens, in which case you would want to use approximately 4 cups chopped to equal 1 cup chopped hard vegetables)
7 eggs (from Roseberrie Farm, Wright’s Family Coop, or Dias and Daughters)
1.5 Tbsp neutral oil such as canola
3/4 tsp salt
Fresh black pepper
1-2 Tbsp whole milk or heavy cream (optional for a creamier texture)
1/4-1/3 cup grated cheese of choice from The Farmhouse Meats and Cheese

Directions:
Preheat the oven to 400 degrees. Heat the oil over medium-high in a large skillet.
Sauté the vegetables until tender (depending on what you use, start with the harder vegetables and add the softer vegetables as you go. Greens should be added at the end since they will cook quickly)
Add the salt, stirring and sautéing for an additional minute or so. Taste and adjust the seasoning as desired, then turn off the stove and transfer the vegetables into a deep pie dish. Spread them out to cover the entire bottom of the dish.
Crack the eggs into a large bowl and whisk along with freshly cracked black pepper and
milk/cream if desired.
Pour the egg mixture over the vegetables in the pie dish, then sprinkle the cheese over the top.
Bake at 400 degrees for approximately 10-12 minutes until the eggs are set, enjoy!
