Breakout Your Sweet Tooth for This Week's Recipe from the Pembroke Farmers Market: Summer Berry Crisp with Vanilla Ice Cream

Berries are delicious, nutritious, and abundant during the summer months. They are also very versatile in the kitchen, whether you’re putting them on top of yogurt at breakfast, mixing them into a salad for dinner, or making them into a sweet and satisfying dessert.
This week, we're featuring a berry crisp recipe, topped off with some homemade vanilla ice cream from Christina’s restaurant - the perfect summer treat!

You can use a mix of blackberries, raspberries, and blueberries (all available from Oakdale Farm,) or stick with just your favorite berries! This crisp will also work with other fruits such as peaches, apples, and more, so you can transition it into any season.
Ingredient For the Filling:
6 cups of berries (I did a mix of blackberries, raspberries, and blueberries, plus I swapped in a cup of rhubarb I had hanging around to add some tartness. Just be mindful if using only raspberries because they are softer than the other two berries and this might result in a more jam-like consistency.)
1 Tbsp granulated sugar (you can also use honey or maple syrup).
Ingredients for the Topping:
1 cup rolled oats.
1/2 cup brown sugar.
1 tsp ground cinnamon.
1/4 cup cold butter cut into pieces.
Optional, but highly recommended:
Vanilla ice cream from Christina’s Restaurant for serving.
Instructions:
Preheat the oven to 350 degrees Farenheit.
Mix the berries and 1 Tbsp sugar together in a bowl, then transfer to a 9x9 baking dish.
Mix the oats, sugar, and cinnamon in a bowl, then add the pieces of cold butter and use a fork or a pastry blender to mash into the other ingredients until a crumbly consistency forms.
Spread the oat mixture on top of the berries and bake for approximately 40 minutes, checking after about 30 minutes to ensure the topping is golden brown, but not burnt.
Serve with a scoop of vanilla ice cream from Christina's, and then do your best to share this sweet treat with friends and family!
