Apple Cranberry Chicken Salad: Recipe of the Week

The apples are in! Apples are a favorite fruit for several reasons: they taste delicious, they’re easy to transport, they last a long time compared to many other fruits, and they are easy to incorporate into a variety of both sweet and savory dishes.



Apple cranberry chicken salad is a classic way to use these fall favorites, and this recipe is made even better by the fact that it uses fresh, local apples that were picked at the peak of ripeness. Stop by Oakdale Farms this Saturday from 10am-1pm at the Pembroke Farmers Market for your apples and scallions!

Ingredients:

  • 2 chicken breasts, boiled until internal temperature reaches 165 degrees F, then shredded

  • 1 medium apple (crispy, sweet varieties work best), chopped

  • 1 large celery stalk, diced

  • 3 scallions (greens only,) chopped

  • 1/2 cup dried cranberries

  • 1/2 cup chopped walnuts (can omit for nut allergies)

  • 1/2 cup mayonnaise

  • 1 Tbsp fresh lemon juice

  • 1/2 teaspoon salt

  • Freshly ground black pepper


Instructions:

  • Put the shredded chicken in a large bowl.

  • Add the apple, celery, scallions, cranberries, walnuts, mayonnaise, and lemon juice.

  • Stir to combine.

  • Sprinkle the salt and pepper evenly over the mixture, then stir again to combine.

  • Cover, then refrigerate for at least an hour to let the flavors blend before serving.
